Target Is Becoming A Problem

Hi Lovelies!

Happy Friday! I can’t believe how fast this week went by! Thank goodness for long weekends:) I bought this dress on Saturday when my cousin and I went to Target to buy sandpaper and painters tape. Yeah, that’s right…in to Target to buy supplies for the corn hole game we made….out with much, much more. I would like to blame my cousin for being a bad influence on me, but let’s be realistic…I would have bought it anyway. Oops.

I wore this dress on Sunday for our barbecue. I love a good maxi dress because its comfortable like a pair of yoga pants, but it’s still cute and can even be a little dressy if you want it to be! This dress is a little bit long on me, but with some low wedges I think it would be perfect. I might even wear it again this weekend:)

Flamingo Love

Hi Lovelies!

It’s official, I have a new obsession. Flamingos have got to be the cutest things I have ever seen. Ok, minus Sophie, she’s the official cutest…Flamingos are a close second though:) It all started with those shorts down there that I found on Etsy. I need them! There is something vintage about them that I love and those little pom poms are just so cute. They would be perfect for summertime with a little pink bikini. <sigh> If only I was a millionaire and/or hadn’t just bought a house. Oh well, I guess I will have to go find some flamingo fabric at the store and try to make some fun stuff! I mean who doesn’t want a cute little pink flamingo on everything they own?!?

Spiked

Hi Lovelies!

I hope everyone had a wonderful Memorial day weekend! Mine was fantastic! Thursday night we went out in downtown Austin for my cousin, Nicolle’s, birthday. We had dinner at Moonshine, and then went to a few bars, which we closed down. I haven’t been out that late in so long, but we were having so much fun sitting on the patio with our drinks, just talking:) Friday was spent at Home Depot and Joann’s getting supplies to create the perfect backyard oasis. It’s official, we have the best backyard ever now! (More details later) Saturday we had a BBQ in our new backyard with some friends, including TONS of really good food. Recipes to come, promise! We also saw the new X-Men movie at the Alamo Drafthouse, which was really good…highly recommend. On Sunday, Nicolle and I got pedicures and lunch, then Wes and I spent the rest of the day relaxing. Overall, it was one of the best weekends I have had in a long time!

This dress is one of my favorites. Not only is it one of my favorite colors, it is comfortable and really easy to accessorize. I also think that the spiked turquoise necklace makes a nice statement with the plain front, and of course you can’t have a spiked necklace without a matching bracelet:) Besides the comfort and the color, the entire reason for the purchase of this dress was really the back…there are some really cool designs out there this season with great backs and I love anything that stand out and isn’t plain old fabric!:)

This weekend made me REALLy excited for our trip to Michigan this summer. I cannot wait for a whole week of lakes, drinks, good food, family, and friends. It really can’t come quickly enough!

Tangy Mango Salsa

Hi Lovelies!

Summer is my favorite season for more than one reason, but one of the best reasons is the food! Summer is when all of my favorite fruits are plentiful and mangoes are at the top of my favorites list! I found this mango salsa recipe online years ago, and I’m not really positive which site it came from, but considering they are all pretty similar that’s ok:) I really love serving it with tortilla chips, like these blue corn ones from Whole Foods, or with Wheat Thins. Wheat thins are probably my favorite actually…definitely give those a try!

Ingredients:

1 mango, peeled and diced
1/2 of a red bell pepper, finely diced
1 green onion, chopped
2 tablespoons cilantro
1 jalapeño, diced
Juice of 1/2 a lime
Juice of 1/4 a lemon
1/4 cup of red onion
Wheat thins or tortilla chips

Directions:

To start, decide if you want your salsa chunky or not. I prefer mine to be more pureed, but some prefer chunkier salsa.
If you prefer it to be chunkier you may want to used a chopping machine such as this one to finely chop all of the ingredients and just mix them together in a bowl.
If you prefer smoother salsa, as pictured, you will want to put your mango in a food processor and turn it on until the mango pieces are very finely chopped.
Then add all of the other ingredients and turn it on chop for a few more seconds.
The mango should puree itself, while all the other ingredients are finely chopped (you don’t want them to puree as well)
I always like to refrigerate the salsa for 20 minutes or so before serving.
Serve with your wheat thins or tortilla chips!
