Balsamic-Mango Marinated Chicken

Hi Lovelies!

My parents bought Wes and I a grill as a belated wedding gift and brought it to us last weekend. We are SO excited about it! Needless to say, we have grilled our dinner every single night since we got it. Well, while I was browsing Pinterest the other day, I stumbled across this little gem! Balsamic-mango marinated chicken! Oh my goodness do mangoes and chicken go well together! It was so good that I just had to share it with you guys. Well here you go:

Balsamic-Mango Grilled Chicken

Ingredients:
2 boneless skinless chicken breasts
1 cup 100% mango juice or mango nectar
1/4 cup balsamic vinegar
2 tbsp olive oil
Salt & pepper
1 mango

Directions:

  1. Measure and pour mango juice, balsamic vinegar, olive oil, salt, and pepper into a Ziploc baggie. Add chicken to baggie and zip closed, then move the chicken around within the baggie to make sure the marinade gets mixed well and that the chicken gets coated with the marinade. Place baggie in refrigerator for at least an hour, the longer the better.
  2. Heat up your grill and begin getting all of your side dishes together. We used mushrooms and asparagus with our chicken. Both were cooked in tinfoil on the grill with a little balsamic/olive oil and some seasonings.
  3. Once your grill is heated, remove the chicken from the marinade and place on the grill. How long you cook it will depend on how high your heat is and what type of grill you have. Make sure that your chicken is cooked thoroughly, as undercooked chicken can lead to some nasty diseases you don’t want!
  4. While the chicken is cooking I cut up the mango to serve on top. I will be honest, I have NO idea how to cut a mango. I have tried about 50 ways and none of them worked well. If you have any suggestions for cutting mangoes, please leave them in the comments below!
  5. Once your chicken is done being cooked, remove from the grill, place chopped mango on top and enjoy!

A Little Bit Austin

Hi Lovelies!

You know, I was very self conscious about posting this outfit. It was hanging in my closet for a week and a half before I actually put it on and took the camera out. I think it was because of the tight fitting dress, I didn’t feel 100% comfortable showing it all off like that. Lol. Well, here’s to stepping out of my comfort zone! This outfit makes me feel very Austin, the chambray and boots definitely give it a little bit of a hipster vibe. It is also super comfy and I LOVE comfy. I got the dress at H&M for $10, which I just couldn’t pass up. I also got it in teal which I’m sure will show up later on:)

Early Fall Style: Leopard, Emerald, and Burgundy

Hello there Lovelies!

I am a summer person. I love the sun, lakes, flip flops, sundresses, tank tops….It is my favorite time of the year. Fall makes me sad, because it means that winter is coming….but fall makes the fashion side of me oh so happy. Fall fashion is my favorite:) I love boots and scarves. I love deep jewel tones and browns. I was inspired by Shanna from Because Shanna Said So and her outfit yesterday. She had this adorable burgundy maxi styled with a leopard clutch and it made me want leopard and burgundy in my closet….NOW! So, here is my take on an early fall style. I only say early for you northerners out there….here in Austin I can wear this deep into November…but for all of you Northerners out there I will say EARLY.

Hi Lovelies!

I am the type of person who doesn’t like to be myself. Even if Wes is in the other room working on something and I am watching TV, it’s just nice to have someone there, it feels less lonely. So, when he bought a plane ticket to Michigan to see his friends for 5 days, I was less than excited to spend those 5 days at home, alone.

Luckily for me my parents decided that they needed to see my uncle’s new farm that same weekend! They came down late Friday night and stayed Saturday night after our adventure to the farm and left very early Sunday morning. This left me with Thursday night, most of Friday night, Sunday, and Monday all to myself. The first night, I will admit, I was lonely. Sophie and I cuddled up and watched Harry Potter in bed. Every creaky noise I heard freaked me out and I slept with the TV on all night. I did not like it. Friday and Saturday night my parents were here with me so I didn’t feel so alone. But, by late Sunday night I had kind of settled in to the quiet. I may have even learned a little bit about myself…maybe being alone wasn’t nearly as bad as I had imagined.

Now, don’t get me wrong, I am SO glad I have a husband. It’s nice to have someone to come home to after a hard days work and to have someone to cuddle up with to watch a movie. It’s nice to fall asleep beside the one you love…but I did enjoy a little alone time. As much as I thought I hated it, it can actually be a little bit nice. I read, I watched what I wanted to on TV, I went to sleep when I wanted to, I listened to my country music and I listened to it loudly…I got to have a little me time. I even took some blog pictures of myself (see above)….I kind of had the single girl life for a couple of days.

I guess the moral of my story is that being alone can seem scary, but I think that every once in a while it is good for you. I had a chance to really think about things and do things that I like, but don’t always do when there are people there. I felt “free as a bird”, if you will. (See how I tied that in there? That whole bird thing? Like the shirt….(PS: I also wore this shirt here in an entirely different way….)

Well, as free as I might have felt, I am still SO glad Wes came home last night. It’s nice to have another person around…Are you the type who always has to be around someone or do you enjoy your alone time?

Weekend On The Farm

Hi Lovelies!

Hope you all had wonderful weekends! My parents came down from Dallas this weekend and we went to a little town between Austin and Houston to see the farm my uncle bought! He also just got a sweet little puppy, her name is Ayla. She is 7 weeks old and is already bigger than Sophie who is 3! She should be around 130lbs when she is full grown! She is one of the cutest little furballs ever and so soft!

She was a little bit scared when we first got there and hid under the truck for a few minutes until she got used to us.

The next door neighbors have 2 beautiful horses that we got to pet. I have to say, I am a little afraid of horses, but they were so gentle.

We fed the piggies while we were there. They were so funny, they would squeal and get all excited about the food.

Sophie loved the farm. She did get a little hot, but her heat was relieved when she accidentally fell into the pig water. Gross….we had to put her in a barrel of water to wash her off and give her a big bath when we got home.

On the way home we stopped in Round Top TX. We really want to come back here in the spring when they have antiques week and find some cool antiques and crafts for our houses! These flowers were beautiful and I had to get a picture for inspiration when we have our own house.

When we got back to Austin, Mom and Dad took me to Z’ Tejas for dinner. It was so good, I was definitely recommend it!

That last picture is a detailed look at the dress I wore to the farm and dinner! I L-O-V-E this dress. It is so comfortable and it has this amazing beading at the top. I got it at Rue 21 a while back, but they always have similar things there. The best part is that you would think it was expensive with all those beads, but I think I spent around $20 on it!

Overall, it was a really fun weekend and it was great to see my parents again. Wes has been in Michigan since Thursday visiting friends and his Mom, so it was nice to have visitors:)
