I got this kimono at Target last week, it’s my first…and let me tell you it won’t be my last! How fun is this? It’s so comfy too! Perfect for throwing on with my jeans or leggings and a tank and having one of those comfy but cute days. I say this all the time about scarves too, but it’s amazing how one item can bring a whole plain outfit together and make it magnificent! The bright colors are great for heightening your mood a little in these dreary cold days we’ve been having.

Some of my girl friends and I went to the Eric Church concert last night and it was too much fun! I wore this outfit again for that because it was comfortable, but still cute enough for a night on the town:) I definitely have a few more amazing ways in my mind that I want to style this beauty, so stay tuned for more!

Spaghetti Squash Alfredo with Shrimp

I’m not a health kick guys! Woohoo! I’ve been doing really well with eating healthy and I’ve been working out regularly. I’ve even been taking Sophie on walks every night (except when it was like 30 degrees….) Now, I realize that alfredo sauce is not the healthiest thing ever, but when you put it over spaghetti squash instead of pasta it makes it infinitely better for you! haha! You may remember this recipe of spaghetti squash with meat sauce a few weeks back, and I still vouch that it is the best one ever….but when you’re in the mood for a creamy sauce this one, is top notch.

I have been a pasta addict since the days of the Little Caesars spaghetti bucket back in the day, so giving it up cold turkey is just NOT going to happen for me. I have to say though, that this recipe is a GREAT alternative! It is filling and it does a great job at creating the same sort of consistency. If you have never had a spaghetti squash before you will want to check out the directions down there, because I just away my BIGGEST spaghetti squash secret: how I cut the damn thing! Enjoy!

Ingredients:

  • 1 large spaghetti squash
  • 1 jar alfredo sauce- I used Classico Garlic Alfredo
  • 1 bell pepper- I used half a red and half a yellow
  • 1/2 lb shrimp
  • 1 cup cherry tomatoes
  • Parmesan cheese
  • Suggestion: This would also be fantastic with some spinach and mushrooms in it!

Directions:

Squash:

  1. Start by heating your oven to 400 degrees.
  2. Cut your spaghetti squash in half. This is a hard one. Thankfully I already have a method and it’s super secret, but I’m going to share anyways haha! I have three words for you, pumpkin carving knife. It works so well and is the only way that is even worth the try:)
  3. Scrape out the seeds on the inside of your squash, just like you would a pumpkin at Halloween.
  4. Spread some olive oil on the insides of the squash and sprinkle it with some salt and pepper.
  5. Lay your squash face down on a tinfoil covered cookie sheet. Put some olive oil on the tinfoil to prevent it from sticking!
  6. Once your oven reaches 400 degrees, put your squash in the oven.
  7. Cook your squash for about 30-45 minutes, depending on your oven, or until it is soft.
  8. Once your squash is soft, remove from the heat and, using a oven mit to hold it still, scrape out your spaghetti squash with a fork. It should be a spaghetti like consistency! You don’t have to scrape the entire squash out, but at least do the top part.

Sauce:

  1. Cook your peppers in a frying pan until done.
  2. Add your tomatoes and shrimp, and cook until the tomatoes are soft and burst with very little pressure.
  3. Add your sauce and simmer on medium-low until  your squash is fully cooked.
  4. I also like to add a little spice to mine with some basil, oregano, minced garlic, and crushed red pepper.

Spaghetti Squash Bowls:

  1. Once the squash and sauce are done, scoop your sauce out into your squash bowl.
  2. Cover with cheese if you would like.
  3. Pop it back in to oven for 5-10 minutes or until that cheese has melted.
  4. Serve!

We like to eat ours out of the squash like a bowl. Makes life more fun. But, you can scoop it all out and be normal too. Have fun and let me know if you end up trying it out!

Neon Neon

Sam Moon yellow tank and necklaceMonday comes yet again. It’s always sad, especially when I had such a relaxing weekend. It was SO cold outside that all we wanted to do was stay inside all day with the heat going. It was actually just what I needed to get a few things done. I worked on my shop a lot and had SIX sales! People are really responding well to my products, especially this gold dot head wrap! I can make it in adult sizes if any of you out there would like one:)

Today’s outfit is one I got a few weekends ago at Sam Moon. I saw this top and KNEW I needed to have it right then! You really can’t beat $13 for a cute top and it just so happened to match the necklace I had in my hand so it was absolutely perfect! I love neon colors and this yellow was the perfect way to brighten up a cold dreary day last week. It’s going to be great for the Texas heat this summer because it’s nice and light!

It is too cold. That’s really all I have to say today. Lol. Last week I was wearing this wonderfully summery outfit…and now this. And this was taken before it got REALLY cold. I haven’t been able to take photos all week it’s so cold. I don’t envy all of your northern bloggers who do this in the snow and such. Thankfully its *supposed* to be 60 today and 70 on Sunday…..let’s hope this is it. I know, I know, I really shouldn’t complain about one week of cold, but this is Texas! I saw this sweater on someone’s instagram and I fell in love. I searched Target.com for it and found it, ON SALE! Woot woot! I wore it in a pretty basic manner here, but I already have some great ideas of more fun ways to style it:) I’m thinking a little pink plaid or maybe a few polka dots? We’ll see!
