Mansfield Dam Park- Austin, TX
This past weekend my parents came down from Dallas to visit and we took a little trip out to the Mansfield Dam Park on Lake Travis. It was so pretty, but it is CRAZY how low the lake is! We looked it up and supposedly the water level is down 50-60 feet to what it’s supposed to be! You can see by looking at the dam and the rocks around the lake where the water should be. I’ll definitely be thinking about it all next time I take a super long shower or water my lawn! Even with the low water level, Lake Travis is still a beautiful sight:) We also went to the brewery at The Oasis which I talked about a little yesterday. I can’t wait to go back once its a little nicer outside this spring/summer! Did you guys do anything fun this weekend?

Scarves & Polka Dots
It’s Monday again…..<sigh> at least it’s supposed to be nice this week. We had a beautiful weekend here in Austin. The sun was shining and my parents were in town so we went out to Lake Travis. We walked around the Mansfield Damn park and then went to the brewery at the Oasis. I am really excited for it to be summer and for our friend from Michigan to come visit so that we can go back. They had cornhole and adult jenga to play and an amazing view of the lake and hill country. If you haven’t been before and you are in the area, you should definitely check it out!

I wore this outfit last week when it was cold. It almost feels wrong to post it today since it’s going to be in the 70s here, but for all of you northern ladies who need warm weather inspiration here you go! Lol! I love the pink and burgundy together, and of course chambray just goes so well with everything. I was going to wear some flats with this outfits, but the polka dot tights and boots were more than necessary last week…my windshield even froze one morning! I really hope that this nice weather is here to stay so that I can start taking some spring time outfit photos, those are my favorite:) How was everyone else’s weekend?!
Easy Taco Salad
Some of you health nuts might scoff at this recipe seeing as though I am trying to eat healthier, but let me begin by saying that if it isn’t pasta I am doing so well! Haha! I am a pasta addict and could probably eat it every day for every meal in different ways and just be happy as a clam. Fat, but oh so happy:) Pasta is also my go to meal when I don’t know what to make or don’t feel like putting much effort into the nights meal. I realize though, pasta is not good…for you that is. It’s really a bunch of carbs with absolutely no nutritional value whatsoever. <sigh> It’s unfortunate, but it’s true…so here I am today with taco salad. This is really good taco salad though:) This batch turned out exceptionally appetizing looking…which is weird, because usually it looks like a wreck but tastes amazing! Lol!
Ingredients:
- Ground beef
- Lettuce
- Taco seasoning
- Beans – I used black, but you can use chili or kidney as well
- Frozen corn
- Red bell pepper
- Onion
- Doritos or other corn chips
- French/Catalina dressing
Directions:
- Cook your ground beed in a pan with the taco seasoning.
- Once it’s half cooked, add your chopped veggies (peppers and onions).
- Sauté these for a little while until they are soft.
- Add your beans and corn and cook until hot.
- Make a bed of lettuce in a bowl and add your cooked ingredients to the top.
- Add some French/Catalina dressing and crush some Doritos on top.
- Serve!
Note: If you want to serve it as a dish at a party, I would let the cooked ingredients cool down a bit then toss them with the lettuce, dressing, and chips in a big bowl. This is also SUPER good cold as left overs! If you plan to eat it later as well I wouldn’t mix all the ingredients together- they get soggy pretty quickly.
There are certain ways to make taco salad a little better on your diet as well if that’s what you’re looking for. For one, you could take out the Doritos (which I am very proud of myself for only putting 3 or 4 in this time) and you could cut back a little on the dressing or put it lite dressing.
