I cannot believe that it is Wednesday again! My Mom was right, the older you get the faster the time goes by. Well, it’s official…fall is here and the bloggers are all going crazy about pumpkin everything, fall colors, and blanket scarves. I will be participating in two of the above: Fall colors and blanket scarves, once I get my hands on one:) I might try a few pumpkin recipes this fall but I’ll be honest, I don’t really like much other than pumpkin bread and pancakes! Today’s post involves those fall colors I was talking about….I LOOOOVE fall colors and burgundy is my favorite of all the fall colors! I found this skirt on Old Navy’s website when I was searching for this dress from Shanna’s post. I have been wanting a burgundy skirt since last year in this post, but this one was the perfect option. Perfect price and perfect fit…highly recommend!

Crock Pot Beef Stew

If you ask google, today is the first day of fall. If you ask the weather channel it was yesterday. I’m going to go with today, since the autumnal equinox is what determines the first day of fall, and it happened at 10:29 P.M. last night, thus making today the first full day of fall:) So, there you have it….happy fall, everyone! To celebrate, I’m going to show you how to make one of my all time fall favorites, crock pot beef stew! I absolutely don’t know what I did before I owned a crock pot. I’m actually a little upset with myself that I didn’t have one during college. You can make such cheap delicious meals with a crock pot with minimal effort. Apparently I was too lazy for even a crock pot. <sigh> Well, thankfully I grew out of those lazy college days, got myself a crock pot, and have been making fantastic home cooked meals ever since. My husband would probably tell you that it’s the best gift he has ever given me…he gets great homemade food, I get to feel like I’ve accomplished something, it’s a win win really. Well, here you have it…the recipe of the season: crockpot beef stew!

Ingredients:

  • 2 cans beef broth
  • 2 lbs beef stew meat- cubed
  • 6-8 red skin potatoes- diced
  • 1 bunch carrots- sliced
  • Peas- frozen
  • 1 onion- diced
  • 1/4 cup flour

Directions:

  1. Cut your meat and veggies into small pieces and place in crockpot (this is the one I have, I love it!).
  2. Add beef broth so that it is just covering all of your ingredients.
  3. Add seasonings- I like to add basil and oregano and a dash or so of crushed red pepper. I also like to add a bit of minced garlic as well.
  4. Add your 1/4 cup of flour and mix thoroughly. This will help to thicken the broth while cooking. You can also add a little bit of heavy cream if you would like to.
  5. Let cook on high for 6-8 hours depending on your crock pot.
  6. When you are almost ready to eat your meal, stick some buns or, my favorite, crescent rolls, in the oven.
  7. Serve by itself or over rice!
***To make paleo beef stew, just take out the potatoes and flour and add sweet potatoes and arrowroot flour instead!***

I hope you enjoy my version:) I opt for some peas instead of celery, I think celery tastes weird and permeates the whole dish, but if you love it go for it! Well, now that you have all the directions, I think it’s time for you to go on and make some delicious beef stew and while you’re at it you should whip up some easy homemade apple sauce for dessert. Why not? It’s fall after all:)

I just can’t get enough of that dainty little turquoise piece, it is a great one to add a little pop of color without being too overpowering. I don’t know about you, but I love it when I find a necklace that I can wear everyday. Something beautiful yet simple. The necklace doesn’t over power my outfit, which is great since there is SO much going on in this one. Burgundy And Combat Boots: Making Those Boots Girly

Combat boots were one of those items that I desperately wanted but didn’t know if I could quite pull off. I bought them last fall and wore them here with a frilly dress and here with a comfy aztec cardigan (Love the sweater, but with the boots it was not my favorite outfit. Felt totally off to me for some reason.) I am not a tom boy. I like pink and lace, frilly things are my best friend, and I think that bright lipstick goes perfectly with anything. That’s just my style. Well, I have a secret for all of you girly girls who don’t think combat boots are for you: they are!  I  just love them when they are “girled up” like in the first outfit. The feminine parts of the outfit downplay the edginess of the boots and gives you a really nice mix. Not to mention, those stud on the boots I have, so girly:)

On Those Who Don’t Matter

I came out to all of my in real life friends and family that I had a blog pretty early on in the whole blogging process. I started my blog in April 2013 and I immediately told my sister, my mom, and my best friends. Obviously my husband the web developer who helped me put the whole thing together already knew, and Sophers has been a  regular on All That Glitters for about a year now so it’s safe to say she knows Momma is a blogger;-) Those people were EASY to tell. They are my support system, they are there for me. All of the important people in my life knew…that was the easy part. I didn’t start posting anything about my blog on my personal Facebook until last August or so, because let’s be honest, I was scared. What was I scared of? Being judged, people talking, let’s just say I was scared of a whole bunch of people thinking I was really dumb.

I have over 1000 Facebook friends, but I could probably only list a couple hundred off the top of my head, maybe even just a hundred or so if we are being brutally honest. Now, do I ACTUALLY care what those 800 people that I can’t list actually think? Not in any way shape or form. To be honest, I should probably go weed through my friends on Facebook, but I’ll say what everyone is thinking: I like to stalk, so they’re staying:) Now, if you take away those 800 people, that leaves me with 200 or so that I actually KNOW. I don’t know why, but those 200 people, yeah…those are the people I was afraid of. It’s unfortunate that I feel this way, but I went to school with most of these people, I KNOW them and I know that they talk. They talk about their friends, they talk about their families, so of course they would talk about their acquaintances that used to be friends right? Maybe not, maybe I’m just giving myself too much credit here in thinking that ANYONE is talking about me, lol, but that was one of my fears in letting those 200 people know about my blog.

You see, I have found over the last 5 years, since graduating from college, that the people I used to be relatively close with are the ones that are the most judgmental and least supportive. Now, that’s not to say that there aren’t some really great people who have sent me messages, comments, liked Facebook pages and posts, etc. and for those people *you know who you are*, thank you. Thank you so much for being a supportive, wonderful person even if we were never that close. I have friends that were there for 4 years in college and then because of our differing opinions now no longer keep in contact with me. These people were once a HUGE part of my everyday life and not one of them has made any sort of hint that they know about this huge part of my life.

I guess part of the point of this long rambling post, is that you find out who your friends are when you grow up. The ones that actually matter and care will stay and the ones that don’t move on and that’s okay. Another big thing, and probably the most important one, is that we all need to be a lot less concerned about what other people think. I know, it’s really hard, but if we would all try to be a little bit more comfortable in our skin and care less about what others though, our lives would be so much happier! Always remember, “Those who mind don’t matter, and those who matter don’t mind.” I have learned so much during this blogging process, but one of the biggest things is not to be afraid of what people think. Always remember, "Those who matter don't mind, and those who mind, don't matter."
